Excellent book. Having taken a break from professional chefing and now looking to return to the industry I purchased it to refresh and update my knowledge. It has done that and more.
I found it to have excellent tips and tricks sections for common areas that may concern a home cook, such as pastry, whisking egg whites, sauces, ect.
The recipes are easy to follow, some are old favourites often with a modern twist to them. Many have little tips on how to present the dish with restaurant style garnishes.
Many classic french techniques such as confit are explained and demonstrated and then taken further by using differing ingredients to produce inovative and modern dishes.
One of my favourite cook books, and I have a few!
